Ingredients

Preparation
  • 1 Pink Lady® apple
  • Salt and pepper
  • 10 g unsalted butter
  • 250 g potatoes
  • 2 mature goats cheeses
  • 13 cl 15% single cream
  • 2 tsp liquid honey
  • 1 tsp dried rosemary
  • 2 sprigs fresh rosemary

Stages

Preparation
  1. Butter two small gratin dishes or ramekins, and preheat the oven to 180°C.
  2. Peal the potatoes, rinse and cut them into thin slices.
  3. Cut the Pink Lady® apples in half, peel them and remove the pips. Cut into thin slices.
  4. Arrange the potato and apple slices alternately in the two moulds, like a French tian.
  5. In a bowl, combine the single cream, honey, dried rosemary, salt and pepper.
  6. Pour the mixture into the two moulds.
  7. Cut the goat’s cheeses in half and place two halves in each mould, on top of the mixture.
  8. Bake for 40 minutes at 180°C.
  9. Once out of the oven, add two sprigs of fresh rosemary for decoration.
