  • 2 slices farmhouse bread
  • 2 slices smoked trout
  • 100 g soft goat’s cheese
  • 8 green asparagus tips
  • 1 drizzle of olive oil
  • Chopped chives
  • Fleur de sel (fine, snow-like salt crystals), pepper
  • 1/2 Pink Lady® apple
  • 1/2 lemon


  1. Bring a pan of water to the boil with a pinch of salt.
  2. When the water begins to boil, add the asparagus tips and cook for around 7 minutes over medium heat.
  3. Then plunge them for a few seconds into a bowl with water and ice cubes to stop the cooking process and preserve their nice green colour.
  4. Remove them from the water, and place them on a clean cloth or kitchen roll.
  5. Cut the Pink Lady® apple into thin strips, and season with lemon juice and a drizzle of olive oil.
  6. Place the soft goat’s cheese, chopped chives, salt and pepper in a small bowl, and mix well.
  7. Spread the goat’s cheese mixture on the slices of farmhouse bread.
  8. Place the drained asparagus tips, apple slices and smoked trout on top. Sprinkle with chopped chives.
  9. Serve with a green salad and vinaigrette dressing.
