For the muffins
  • 1 Pink Lady® apple
  • 190 g flour
  • 90 g sugar
  • 1 packet yeast
  • 1 egg
  • 80 g salted butter
  • 120 ml milk
  • 1 tsp vanilla extract
For the crumble topping
  • 75 g flour
  • 1 tsp cinnamon
  • 40 g butter
  • 75 g brown sugar


For the muffins
  1. Preheat oven to 200°C.
  2. Melt the butter in the milk in a saucepan.
  3. Break the egg in a bowl, and whisk in the sugar, then gradually pour in the melted milk and butter mixture, and add the vanilla.
  4. Add the flour, baking powder and diced Pink Lady® apples, and mix well.
  5. Divide the batter between the previously lined muffin moulds. Set aside while you prepare the crumble topping.
For the crumble topping
  1. Mix the brown sugar, butter and flour, then add the cinnamon.
  2. Sprinkle a little crumble topping over each muffin.
  3. Bake for 5 minutes at 200°C, then 20 minutes at 180°C.
  4. Cool and serve warm.
