Pain doux de pommes Pink Lady® au gingembre et son coulis de fruits rouges

Ingredients

  • 2 Pink Lady® apples
  • 50 g flour
  • 2 eggs
  • 1 vanilla pod
  • 1 half tsp ground ginger
  • 100 g caster sugar
  • 500 g frozen mixed berries
  • 3 tbsp cane syrup

Preparation

  1. Separate the egg whites from the yolks. Beat the egg whites until very stiff and then gently fold in the yolks. Gradually add the sugar. Finally, incorporate the flour very slowly. Peel the Pink Lady® apples and slice into cubes. Mix them into the batter.
  2. Grease the pan and pour the mixture in. Bake in a preheated oven (gas mark 6-7) for 15 minutes and then check the consistency with the tip of a knife. Bake for a few more minutes if necessary.


Pink Lady® top tip

Meanwhile, pour all the mixed berries into a saucepan with the syrup and ginger. Cook over very low heat for 10 minutes. Mix and strain and then set aside. When the cake is done, serve it with the coulis.
