The contrast of hot and cold truly enhance the flavors of this dish !


  • 1 Pink Lady® apple
  • 25 g butter
  • 2 tsp pine nuts
  • 1 and ½ tsp light brown sugar
  • 2 scoops pistachio ice cream


  1. Preheat oven to gas mark 6-7. Quarter, core and dice the Pink Lady® apple, but do not peel.
  2. Cut out 2 squares of greaseproof paper and arrange apple cubes, small pieces of butter, brown sugar and pine nuts in the centre of each square. Twist the ends to close like a sweet wrapper. Bake for 20 minutes in a hot oven.

Pink Lady® top tip

When serving, open the papillote while it is still hot and place a scoop of pistachio ice cream in the middle of the melting apples. Serve hot.
