A must ! These skewers are deliciously fruity and full of vitamins; the perfect ending to your meal.
- 2 Pink Lady® apples
- 200 g caster sugar
- 8 apricots
- 16 strawberries
- Cut the apples into quarters, remove the cores and then cut each quarter into three slices. Cut each apple slice in half crosswise. Cut the apricots in half and remove the pits. Put the fruit on skewers, alternating between apple wedges, strawberries and apricot halves.
- Pour the sugar in a saucepan with a thick bottom, and add just enough water to wet it slightly. Put over medium heat to colour. When the sugar begins to melt, stir very gently so that the sugar melts evenly, and then let cook until the sugar turns golden-brown. At this point, put the bottom of the saucepan into cold water to stop cooking. Let cool 2 minutes.

Arrange the skewers on a sheet of greaseproof paper and pour the caramel over them. Let the skewers cool down before handling. Serve immediately.
