  • 2 Pink Lady® apples
  • 250 ml water
  • Salt and pepper
  • 2 tbsp olive oil
  • 125 g chickpea flour
  • 1 half ½ bunch fresh chives
  • 3 or 4 slices smoked salmon
  • 1 soft goat’s cheese
  • A few salad leaves of your choice


  1. Start by combining the chickpea flour, water, olive oil, salt and pepper to make the socca batter. Let it rest for 30 minutes.
  2. Heat a frying pan with a little olive oil, pour in a ladleful of batter and cook for a few minutes, then turn the socca over to cook the other side. Repeat with the remaining batter to make several soccas.
  3. Crush the goat’s cheese using a fork and mix with finely chopped chives, a drizzle of olive oil, salt and pepper.
  4. Spread the mixture over the soccas, then garnish with diced Pink Lady® apples, pieces of smoked salmon and a few salad leaves.
  5. Enjoy sliced, like a pizza.
