  • 1 tbsp honey
  • 4 cherry tomatoes
  • 100 g soft goat’s cheese
  • Fleur de sel (fine, snow-like salt crystals), pepper
  • 2 slices cured ham
  • 2 filo pastry sheets
  • Rocket salad
  • Olive oil, wholegrain mustard, balsamic vinegar
  • 1/2 Pink Lady® apple


  1. Preheat the oven to 170°C.
  2. Start by making the Pink Lady® apple and goat’s cheese samosas.
  3. Peel and core the apples, then cut them into thin strips. Fry them in a pan with a little butter and honey, until caramelised.
  4. Cut the filo pastry sheets into strips a few centimetres wide.
  5. On each strip, place a few slices of apple, a spoonful of soft goat’s cheese, a drizzle of olive oil, salt and pepper. Fold each strip into a triangle, as many times as necessary.
  6. Place the samosas on the oven rack, and bake them for 10 minutes at 170°C, turning them over halfway through.
  7. Meanwhile, arrange the salad on the plate, along with the halved cherry tomatoes and slices of cured ham.
  8. Prepare the dressing using olive oil, balsamic vinegar and wholegrain mustard.
  9. Arrange the samosas on the salad, and drizzle with dressing to taste.
