Heart-shaped Pink Lady® apple and shrimp papillote

Ingredients

  • 1 Pink Lady® apple
  • 12 frozen shrimp (large size)
  • 1 lemon
  • 3 cl olive oil
  • 6 pinches sea salt
  • 6 pinches Espelette pepper

Preparation

Peel open the shrimps being careful to keep the last ring and the tail, then remove the gut using a paring knife.
Peel and cut the apple with an apple peeler, and cut into small pieces. Keep the apple peel.
Zest and juice the lemon.
Mix the olive oil, lemon juice and zest, then season with the sea salt and Espelette pepper.
On a sheet of transparent cooking paper, place 2 shrimps in the shape of a heart (with the tops and tails facing each other). In the middle place some apple pieces and sprinkle generously some of the olive oil mixture on top. Close the papillote with string or a clothes pin, and tie some of the apple peel around it for decoration. Make 6 papillotes in this way.

Place the papillotes in a hot frying pan and cook on low heat for about 5 minutes (the papillotes should swell and the shrimps turn pink).
Serve immediately.

Clever tips

Accompany with individual servings of a green vegetable fricassé, cooked in olive oil.
