Ingredients for 4 servings
- 2 Pink Lady® apples
- 3 endives
- 2 oranges
- 5 tablespoons olive oil
- 1 tablespoon poppy seeds

- 1- Cut the endives in half lengthwise and then slice them thinly. Wash the apples and dice them. Mix the sliced endives and the apple cubes in a mixing bowl, pour lemon juice over and mix quickly.
- 2- Peel an orange and separate into quarters. Squeeze the other orange into a mixing bowl. Add the olive oil, salt, pepper and poppy seeds and beat to obtain a smooth vinaigrette.
The special touch
Pour the vinaigrette over the endives and apples, add the orange wedges, mix and let chill for at least 15 minutes prior to serving. You can add walnut pieces or hazelnuts.
